Sensory analysis panels, precision tools

Since the creation of the Research & Innovation department, Groupe Charlois is provided with sensory analysis panels duly trained in the evaluation of wines and spirits aged thanks to the products of the Group : vats, barrels, oak products for enology.

Since the creation of the Research & Innovation department, Groupe Charlois is provided with sensory analysis panels duly trained in the evaluation of wines and spirits aged thanks to the products of the Group : vats, barrels, oak products for enology.

As a specific subject, sensory analysis requires special learning. It makes individual competence a collective expertise on descriptors that lead to consensus and are quantifiable. This tool makes it possible to transcribe in encrypted data the stimuli sent by the drink to the taster by evacuating the notion of pleasure and preference. The objective data generated are processed by statistical analysis.

This work allows to qualify the samples and to highlight the differences in order to go further in the understanding of wood-wine interactions.
